I’ve been thinking about making some changes, because right now I am definitely not getting enough fruits or veggies and I need to do less red meat and more lean proteins. I’m taking this post as a sign to move into action. 🙂

I eat a lot of salads. I too find it hard to get enough veggies in unless I am leaning in on being semi-vegetarian at the time. Before we had kids, my husband and I were vegetarians in the house. When we went out, we could eat whatever. I am thinking about trying a variation of that here with him eating fish or vegetarian at home and me eating vegetarian when I cook. Still working out the details…
