This is a make-ahead recipe that needs to be refrigerated overnight (or at least for a few hours). A great breakfast for weekend mornings, for special occasions, or any random morning when you want some cinnamon-y goodness!
Heat butter and brown sugar on the stove over medium heat until melted.
Combine eggs, milk, cinnamon, and vanilla bean paste. Whisk well.
Grease or spray pie or casserole dish. If you use a casserole dish you may be able to use a full loaf of French bread.
Pour brown sugar/butter mixture into the prepared pan.
Top with French bread.
Pour milk/egg/cinnamon/vanilla mixture over the bread pieces. Toss it around a bit until every piece is fully coated.
Cover and refrigerate for at least 4 hours (but more preferably overnight)
Bake at 350*F for 30-45 minutes or until the bread is no longer soggy. The actual time will depend on the type of milk and bread you used, as well as your own oven settings.
Notes
If you use too much milk, you may find your casserole is still soggy at the bottom. If this happens, use a spatula to flip parts of the casserole over, and continue baking for another 10-15 minutes.
Cooking times vary greatly depending on the amount of bread and milk as well as the type of bread you use, so be sure to keep an eye on it after about 30 minutes! :)
