Garden-Fresh Salsa Verde

Spring has sprung. Garden are producing fresh veggies Just in time for National Salsa Month.
Salsas are low in calories. One way to celebrate National Salsa Month this May would be to try salsas with different ingredients like mango or pineapple.
Today’s recipe utilizes tomatillos: Garden-Fresh Salsa Verde

This tasty, versatile dish can be used just about anywhere you’d use traditional tomato salsa. Serve with tortilla chips or stir it into your favorite soup and chili recipes for additional flavor.
Garden-Fresh Salsa Verde
Ingredients
- 1 lb. tomatillos
- 2 medium jalapeno peppers
- 3-4 cloves fresh garlic peeled
- 2 T. extra virgin olive oil
- 4 green onions chopped
- ¼ c. fresh cilantro leaves
- ¼ c. fresh lime juice
- 2 t. ground cumin
- 2 t. dried oregano
- Optional: 1 T. maple syrup
- Sea salt and black pepper to taste
Instructions
- Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper or a Silpat® baking mat. Set aside.
- Husk tomatillos and cut in half. Arrange tomatillos in a single layer on a prepared baking sheet, along with whole jalapeno peppers and garlic cloves. Drizzle with olive oil and toss gently to coat.
- Place baking sheet in preheated oven for 15-20 minutes or until vegetables are tender. Remove from oven and let cool for several minutes.
- Once cool enough to handle, cut jalapeno peppers in half and remove seeds before transferring the roasted veggies to a blender or food processor. Add green onion, cilantro, lime juice, ground cumin, and oregano. Pulse until ingredients are combined, but the mixture is still a little chunky.
- Taste and add a drizzle of maple syrup to sweeten, if desired. Season with salt and black pepper, to taste, and serve immediately or freeze for later use. Enjoy!

Spicy Mango Salsa
Ingredients
- 2 medium mangos peeled and chopped small
- 1 medium red bell pepper chopped small
- ½ medium red onion diced small
- ½ medium jalapeño finely minced
- 3 T. fresh cilantro finely chopped
- 2 T. fresh lime juice
- Sea salt and black pepper to taste
Instructions
- Combine mango, bell pepper, red onion, jalapeño, cilantro, and fresh lime juice in a medium glass or other non-reactive bowl. Season with salt and black pepper, to taste, and stir to combine.
- Serve immediately or cover and place in the refrigerator until ready to use. Enjoy!

Fresh Homemade Salsa
Ingredients
- 2 lbs. fresh tomatoes divided
- ½ large jalapeño seeded, divided
- ½ large white onion divided
- ½ c. fresh cilantro divided
- 2-3 large cloves garlic peeled
- ½ t. coarse sea salt
- 2-3 T. fresh lime juice
Instructions
- Divide the tomatoes, jalapeño, onion, and cilantro equally into two groups.
- Roughly chop one group and add to a high-powered blender or food processor, along with the garlic. Sprinkle with sea salt and pulse until the tomatoes, jalapeño, onion, cilantro, and garlic are thoroughly combined, but not completely liquified. Transfer to a large, non-reactive bowl and set aside.
- Finely dice the remaining tomatoes, jalapeño, onion, and cilantro, and add to the bowl with the tomato mixture. Add the fresh lime juice and stir to combine. Taste and add additional salt and fresh lime juice, if desired.
- Serve immediately or cover and refrigerator overnight to allow the flavors to mingle. Enjoy!
