National Waffle Day! Doesn’t that sound super sweet!
There are so many different types of waffles and so many ways to top them. Anything to suit your taste buds. I have included a couple of waffle recipes — you can take these, use them as is. Or you can let your imagination run wild!

Chocolate Waffles
Breakfast has never been so good! With these heavenly chocolate waffles, you'll be set to start your day with something sweet. These are quick and easy to make and take care of your sweet tooth. Simply top them with what you like and enjoy.
Equipment
Ingredients
- 1 1/2 C baking mix
- 2 eggs
- 1 C sugar
- 1/3 C baking cocoa
- 3/4 C water
- 2 T canola oil
Instructions
- Spray a waffle iron with a nonstick cooking spray and allow the iron to heat.
- Toss together the baking mix, sugar, and cocoa in a large mixing bowl.
- Add the water, canola oil, and eggs and blend until all the ingredients are mixed together well.
- Pour the batter using a measuring cup (size depends on the size of your waffle iron) onto the heated waffle iron.
- Bake 5 minutes or until the steaming stops.
Notes
Note: I sometimes substitute butter for canola oil.

Honey and Pecan Whole Wheat Waffles
Honey Waffles are the best way to start the day. These waffles are made with whole wheat, and topped with honey and pecan halves. So, what are you waiting for? Make some today!
Equipment
Ingredients
- 2 C baking mix
- 1/2 C whole wheat flour
- 1 1/2 C milk
- 2 T sugar
- 2 T canola oil
- 1 egg
- 3/4 C honey
- 1/2 C pecan halves
Instructions
- Spray a waffle iron with a nonstick cooking spray and allow the iron to heat.
- Toss together the baking mix and flour.
- Add the milk, sugar, canola oil, and egg and stir until well blended.
- Pour the batter onto the hot waffle iron.
- Bake 5 minutes or until the steaming stops.
- Mix the honey and pecans halves together.
- Pour the honey mixture over the top of the waffles before serving.

Cinnamon and Ginger Waffles
Waffles are an easy and delicious way to serve breakfast to a few or to a crowd. These waffles are light and fluffy and full of great taste.
Equipment
Ingredients
- 2 C flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1 1/2 C fat free buttermilk
- 3 tbsp canola oil
- 3 tbsp molasses
- 2 tsp fresh ginger grated fine
- 2 large egg separated
- 1/2 C applesauce
Instructions
- Place the flour into a large mixing bowl.
- Add the baking powder, baking soda, salt, and cinnamon and toss to combine.
- In a separate bowl whisk together the buttermilk, oil, and molasses until well blended.
- Add in the ginger and egg yolks and whisk to combine.
- Fold in the applesauce.
- Pour the milk mixture into the flour mixture and stir until just combined.
- In a separate bowl beat the egg whites with a mixer on high speed for about 5 minutes or until soft peaks from when the beaters are lifted up.
- Gently fold the egg white mixture into the batter.
- Spray the waffle iron with a nonstick cooking spray and preheat.
- Pour 1/3 C of the batter onto the waffle iron spreading the batter to the edges.
- Close the lid and cook 5 minutes or until the steam stops.
- Continue until all the batter has been used.
