Today is National Egg Day!

I remember when I was a child, scientists decided eating too many eggs was not all that healthy. Which ran counter to what they believed before that. There was some concern about the cholesterol content in eggs. Many people tried to reduce their egg intake to avoid cholesterol.

Now, the pendulum has swung back the other way. Eggs can be a part of a healthy diet (in moderation, of course). For healthy adults, eating one egg a day can allow you to remain within the daily cholesterol limits, according to the American Heart Association.

So, with today being a day to celebrate the egg, I have a couple of recipes and a tutorial for you to do just that!

Enjoy!
