8 Amazing Benefits of Gratitude
Beth was a negative nelly who struggled to find anything good about her life. As a result, she was chronically unhappy. She didn’t make as much money as her co-workers because her boss had it in for her. Her marriage wasn’t fulfilling because her husband wasn’t romantic enough. Her book wasn’t published because her agent wasn’t working hard enough. Finally, after hearing yet another rant about everything that was wrong in her life, Beth’s friend suggested the common denominator. “Perhaps the problem isn’t everyone else. Perhaps the problem is you. Do you even realize how often you complain?” her friend asked. Deeply offended, Beth began logging how often she complained.…

January has been a busy month. The College Football Championship, the Grammys, NFL playoffs, my birthday… Lots to do and see. And on top of that, slow cookers and baking get a special highlight this month. However, I didn’t spend much time on one other month — National Soup Month! Today is the last day of the month. I need to include something for that theme right?…

Some of the links below are affiliate links meaning that at no additional cost to you, I will earn a commission if you purchase something using the link. Read the full disclaimer policy here. One of the great things about summer is the abundance of corn on the cob. We grill some almost every time that we grill in the backyard. But in the winter, I don’t think about corn as much because we aren’t grilling as much. But you can still have tasty corn during the winter months using your slow cooker. Like a prelude to warmer winter, right? If…

Slow Cooker Month: Oh so Sweet Orange Chicken
Today I have another delicious chicken recipe for you. Again the recipe calls for chicken thighs. You can use bone-in and pick out the bones as you eat, or go ahead and buy boneless, skinless chicken thighs which is what I typically do. We would rather not deal with the bones! I’ve also made this with chicken breast (cut into quarters before cooking) and chicken tenders. Both versions worked out fine, but we preferred the taste of the chicken thighs. You can also use other greens like spinach! If you want the recipes from this month in your mailbox, sign up here: Slow Cooker Challenge

Adapting Your Favorite Meals To Slow Cooker Cooking
We all have favorite dishes that everyone in the family enjoys. Why not adapt them to the slow cooker so you can enjoy them even on the busiest of days or when you’re not really in the mood to cook. What Can You Slow Cook? While not every single recipe lends itself to preparing it in the slow cooker, you’ll be surprised how many dishes do. Soups, stew, and casseroles are a no brainer. But have you tried making your famous spaghetti sauce in the slow cooker? Just cook some pasta. When it’s ready, dinner is served. Or how about cooking your grandma’s meatloaf recipe in the crockpot? Obviously you…

Slow Cooker Month: So Good Slow Cooker Stuffed Peppers
I remember the first time I saw a stuffed pepper. I was young and had only seen peppers used as sides and flavor enhancers — never the main dish. As I grew older I learned to appreciate their versatility. These stuffed peppers are full of meat and veggies making them a great healthy meal. The best things are that cooking them in the slow cooker makes this easy enough for a weekday meal and that the peppers turn out super sweet and tender with the long, slow cooking. They are so good!
