Spicy Black Bean Taco Wraps with Fresh Guacamole

    September 16, 2020 / No Comments

Grab the chips! It’s National Guacamole Day! Or in this class, put the guac on your Spicy Black Bean Taco Wraps! These vegetarian spicy black bean taco wraps are perfect for Meatless Mondays or anytime you want to get a meatless meal on the table in around 20 minutes. There is also a mango salsa that is mentioned in the recipe. That recipe is included below! This mango salsa goes really well with this recipe but it tastes pretty good on chips or alone! Let me know how you like these recipes in the comments!

    August 3, 2020 / No Comments

“Creamy” Wild Rice and Mushroom Soup

    January 31, 2020 / 2 Comments

I need to include something for that theme right? And it fits in with the slow cooker theme too! Another Two-fer! Today’s dish is a vegetarian rice soup. This satisfying, earthy soup is so warm and comforting. The wild rice is filling, while the finely minced and chopped vegetables give the soup…

Healthy Slow Cooker Vegetarian Meal Ideas

    January 29, 2020 / No Comments

My slow cooker challenge has been very meat-heavy. There have been some meatless recipes but not a lot. So we are going to give you a few more options! Slow cookers make it so easy to prep and plan your meals, not to mention cooking when you aren’t even home. When you are switching to a brand new diet, such as going meatless, it can be helpful to make the cooking process as simple as possible. So here are some healthy and delicious slow cooker vegetarian meals to try out. Lentil Chili Chili is often associated with being a meaty dish, but it doesn’t need to be. You can use…
